Tarragon

Tarragon (Artemisia dracunculus), also known as estragon, is a perennial plant of the sunflower family, widely used as Spices and Herbs in various world cuisines. It is especially suitable for chicken, fish, and egg dishes, and is also the main flavor in Béarnaise sauce. Additionally, tarragon is used to flavor the popular carbonated soft drink in Armenia, Azerbaijan, Georgia (where it originated), as well as Russia, Ukraine, and Kazakhstan. This drink, called Tarkhuna, is made from a sweet tarragon concentrate and is bright green in color. In Iran, tarragon is used as a garnish for sabzi khordan (fresh herbs), as well as in stews and Persian-style pickled vegetables, especially khiar shoor (pickled cucumbers). In Slovenia, tarragon is added to a variant of the traditional nut roll potica, while in Hungary, a popular chicken soup is flavored with tarragon.
