Berries
The berries are often used in Persian cuisine, in dishes such as rice pilaf (known as zereshk polo) and as a seasoning for poultry meat. Because of their natural sour taste, they are sometimes cooked with sugar before being added to Persian rice. In Iranian markets, zereshk are sold dried. In Russia, they are sometimes used in jams (especially mixed berry jams), and their extract is a common flavoring in soft drinks and sweets.
