Bockwort is an annual plant in the Fabaceae family, with leaves consisting of three small obovoid to oblong leaflets. The cuboid-shaped, yellow to amber-colored seeds are often used in the cuisine of the Indian subcontinent. Bockwort is used both whole and ground in the preparation of pickles, vegetable dishes, dal, and spice blends such as panch phoron and sambar powder. To reduce the bitterness and improve the flavor, the seeds are often roasted before use.
