"Carrots are rich in antioxidants, as are plump olives—a star of the healthy Mediterranean diet. If shaving carrots lengthwise seems like too much work or complicated, you can shave them or thinly slice them into coins. Fleshy green olives work great for this salad, but any olive, including oil-dried black ones, will add a nice briny, salty flavor."
